Zhejiang province is the main green tea producing area in China. When we speak about green tea, we cannot forget to refer to long jing tea, known all over the world, which, due to the legends and narrative stories related to it, has become a genuine card for Zhejiang province. Almost all residents of Zhejiang province like to drink green tea. During processing, temperature control is very important. Long jing tea processing is said to last more than 4 hours. A skilled worker can only process a pound of tea a day.

Dragon well tea or long jing is among the most popular Chinese green tea because it is good, classic and tasty – I think it’s impossible not to love it. The leaves are beautiful, long and flat, pressed but not twisted. They have an incredible colour for dried tea – that kind of green grass. It looks absolutely awesome! The first impression in terms of taste is that it is sweet. Then follows that raw flavour, but not too strong though, it’s just nice. The taste has something fresh in it, and a pleasant aftertaste, though not very long. And the smell, well, it smells like spring and rain!

It is interesting to wait for dragon well tea to cool, because the taste changes slightly – it becomes stronger with a longer and more interesting aftertaste. The use of large quantities of leaves is recommended – about a tablespoon and water considerably colder than we expected – 65 degrees C. Dragon well tea is famous for its distinctive characteristics, especially for its green colour, its rich flavour and its sweet aftertaste.

Regarding the varieties of tea plants selected for long jing tea, requirements are as follows. Tea buds are green or yellowish green and have few or no hairs. The buds are sleek, with thin stems and the angle between buds and leaves isn’t too wide. Plants produce many buds that grow quickly and more harvestings can be made. Also, there are high standards regarding the chemical composition of fresh buds: a bud with one or two leaves should contain high levels of chlorophyll, providing the green colour of dry leaves and the deep green colour of the leaves in infusion.
